Breaking into the dynamic Louisville restaurant scene comes with its own challenges, but for the newest edition to local Indian cuisine, making a name is all about standing behind the quality of food. Himalayan Restaurant opened in late 2017 under the supervision of head chef Teknath Niraula and has developed a niche using a unique yet traditional Northern Indian and Nepali style of cooking.

California Chef Teknath Niraula

Niraula comes from the West Coast, and has worked in Indian and fusion restaurants from Vegas and Los Angeles. Last year he uprooted his first personally owned restaurant in Hollywood to move to Louisville and be closer to his extended family. Now Niraula is bringing his talent and love for Nepali cuisine with him to his new home on Bardstown Road in the eclectic highlands.

The secret to the Himalayan unique flavor is Niraula’s personal blend of spices. “I make my spice from hand by scratch, none of my spices are store bought.” Himalayan also uses the traditional Nepali cooking method of a clay oven to bake the staple of any Indian dish, nann bread. The authentic style kebabs are also seared inside the clay oven which locks in the savory flavor of the meat.
